A Cupcake Success!

Yesterday I had a cupcake success story, and I was very proud of myself for not giving up.

This summer I've been super busy with my grandchildren just trying to make sure they have the best summer ever when they are at my house either staying the night or just staying for the day while mom and dad works. I got paid my very first check from my Amazon book sales! All I could think about was going to the store and buying the grandkids 2 pop up tents so we could have a camping night in my living room. I didn't get paid a lot from my sales, but it was worth every dime to spend on my little ones! I can surely say that camping night was a huge success. I had 3 of my 4 grandkids overnight on Monday. We had so much fun that the kids swam, we made smores, popcorn and camped out on my living room floor in their new pop-up tents! What a true blessing.

So anyway, to get to my story LOL.

For about a month now, I've known about making cupcakes for local nursing homes and that I was supposed to have 2 dozen cupcakes made by 6pm last night for our church. (Now I said HAVE to have made). What I mean by that is that I volunteered to make 2 dozen. My husband even went 2 weeks ago and bought me the things I needed to make the cupcakes.

I've been so rattlebrained this week with the grandkids and sooooo busy it just slipped my mind. around 4pm yesterday my friend Terra text me and asked if I was going to the gym. It was gym night, and I've been skipping quite frequently LOL. Everyone was meeting at the gym at 5 for an hour. I told her "Yes, Dave and I are going, I will see you there!"

FIVE O CLOCK rolls around and instantly pops in my head, "CUPCAKES! Oh NO!" I had officially forgotten to bake my 2 dozen cupcakes. 

My mind immediately goes in panic mode! I text my friend Terra, and I tell her what's going on and tell her I have to bake 2 dozen CUPCAKES in less than an hour and have them to the church by 6 and I won't be to the gym! Then I text my friend Shirley from church franticly and I say, "I FORGOT TO BAKE THE CUPCAKES!!!" Then I text my husband and freak out a little to him about the cupcakes LOLOL!

Everyone showed their support and never doubted me. My husband even offered to go by the store and buy the cupcakes, BUT I was determined to get these baked. "IF THEY CAN DO IT IN LESS THAN AN HOUR ON THE BAKING SHOW THEN I CAN DO IT, I GOT THIS!"

So, I immediately go into the kitchen and start flinging pans and ingredients all over the place while I make a large cup of Keurig coffee LOL. I was a frantic mess so why not add coffee to my madness? I don't even think I waited for that cup of coffee to cool off, I just drank it so fast before I knew it, I was putting on a second cup!

The part I was worried about the most was that I didn't have a fancy chiller to cool the cupcakes to get them iced quickly so I had to work with what I had, and only having one cupcake pan. On the baking shows, they have unlimited oven and pan supplies! ha-ha. 

I can successfully say that by 5:45 I was pulling out my 2nd dozen cupcakes from the oven and then trying to get them all iced. I had a mess! Icing all over my hand and arms, batter everywhere! By the time I was finished I even had the kitchen all clean from my mess and the cupcakes all placed in Tupperware containers ready to deliver to the church and I was only about 5 minutes late!

I had the biggest coffee rush and sugar high from eating icing and cake batter LOL.

I walked in the church with my husband and the cupcakes, and I said, "PUT ME ON THE BAKING SHOW!!!" LOL

We ended up helping wrap up all the cupcakes for the nursing home and it was truly a pleasure to go with my church family to deliver the cupcakes to the nursing home residents. Seeing all of their smiles was so rewarding and i was so glad I didn't give up on them.

My question is, "What would you have done? Would you have just said I forgot to make the cupcakes and went to the gym anyway? Would you have said, O well, they will have plenty?

I made a commitment to my church and one way or the other, I was keeping my word.
